Login to your cPanel account. Then in the software section, you must click on the "PHP Manager Tool" in cPanel. Select the PHP version that you wish to change from the drop-down menu. Click on "Set as Current". Save it. However, it is important for you to note any change you make in the selected directory will automatically change in the sub-directories which are listed under it. 
 
In case, the change is for multiple directories that are running different versions of PHP and you wish to run one version of PHP. Click on the directory name and select the version from the list and click on Save. The PHP version for your website is changed.

You may be using one version of PHP on one domain and a different version of PHP on a different domain.
